In walking distance from NYU in Manhattan, we went to follow some instagram fame and checked out: Birch Coffee.

The place is small and clearly wants you to have more conversations. There are little signs with conversations all around – a cute idea.

The coffee menu is home to a good amount of pour-over options, including Ethiopian and Colombian.

Preparation was fairly by the books. Only I didn’t see the filter being rinsed – but I may have missed it. Otherwise scale was there and used. Timer I didn’t see.

The result was a very cholocate rich cup of Colombian coffee – a little dark for my taste but definitely tasty.

Birch Coffee is definitely worth checking out – also their cold brew was great.
