During a visit to the greater Seattle area, we had a chance to explore a few cafes as well. First on our list was Third Culture Cafe in Bellevue.

The place is big and could probably be called industrial. Pastries looked very delicious, but we had come for the coffee:
A very strong start: we ordered two cups of the same bean, but they were prepared separately. In many cafes baristas don’t take the time to do that, but that generally affects the taste. All components of the pour-over setup were rinsed, scales and timers were used. The pours were done very calmly and consistently.
The result was an outstanding cup. The Adisu Kidane had a deep blueberry note and a strong amount of acidity.
Third Culture Cafe is definitely worth a visit, we did so multiple times and found consistency as it should be.
